Eucalyptus Honey
This tree emigrated from Australia and has only recently been introduced into Italy. It was imported because people were convinced that the draining action of its roots would reduce the number of mosquitoes, and so it was planted near wet and marshy land. It was also thought that the smell of the leaves would repel the annoying insects. Its seems to have done little to change the situation, and therefore remains to form wind-barriers with its rapid growth, to embellish gardens, and dulcis in fundo, to construct furniture. It seems impossible, but is true, that in the mid nineteenth century an old family in Caglieri had the secret of a technique for working this wet wood. Those days are over but the trees have remained more or less everywhere. They give a honey which is aristocratic, aromatic and persistent in taste. It is ideal in sweet-sour sauces and for breakfast. It ensures an excellent balance and is especially suitable for use in winter, at night with a mug of hot mink. A Eucalyptus tree may grow to a height of 150 metres. Its white or slightly pink flowers are ready between May and July. This honey is made by families living at about 400 metres on hillsides, near dykes. The hives are carried, which does not harm the best honey and ensures an uncontaminated position. The honey is an antiseptic for the lungs, the urinary system and intestines. It is recommended for all disturbances of the respiratory organs, especially bronchitis. It calms coughs, combats cystitis, urinary infections, etc., and is a vermifuge. Ideal for children with pinworms.
