lindenhonig
In diesen unberührten

Lime Flower Honey
With its many blossoms, July brings us the flowers of the lime tree. In herbal medicine, its tiny white blooms are gathered and preserved in wooden boxes, to be used in winter against the cold. It is an ancient remedy of peasant folk. The honey we are proposing is produced in a few little woods which still stand indomitable in the Valsesia valley. In those uncontaminated places, the lime flowers give off an intense, sweet perfume in the fresh afternoon air or on certain warm summer nights in July, which melts the hearts of the toughest valley dwellers. It is a surprise for us each year to find that the perfume of the flowers is preserved in the honey. The suffused amber colour with a slow, fine crystallisation is perfect for this soft honey. Its decided, penetrating taste is long-lasting, making it ideal to sweeten warm herbal drinks in winter. A slight minty taste may also be detected. It also sometimes contains honeydew which darkens its light colour. The bees love not just to suck the nectar of this tree, but also the sugary lymph which aphids cause on its bark. Production is limited, it is a honey which must be used in small doses. It has diuretic and sudoriferous properties. It calms nervous tension, and the common cold. Almost all honeys contain lime flowers.
